In 2015 chef and entrepreneur Mathew Yamali left the world of fine dining to explore the exciting world of food trucks. After conducting thorough market research, he decided to launch Roll It Up Sushi truck, which quickly gained popularity due to the lack competition and the ease of entry into major events in Colorado. Jesse Turkus was inspired by Yamali's success and joined him in 2019 to open Downtown Fingers food truck. Together, they have expanded their business by opening several more trucks. Chef Joshua Davis, who had been running food trucks for years, also joined the team and opened his own trailer, Super Smash Burgers. The group has now grown into a catering company of four food trucks and a restaurant. Over the years, they've worked just about all the major events in Colorado, from gypsum to pueblo, the concepts have done it all, now they are working together to create a one-stop-shop for all parties interested , no pun intended.
